Healthy Morning Muffins
Good for school mornings.
ingredients
- 1 1/4 c all purpose flour
- 1/2 c Packed dark brown sugar
- 1/2 t baking soda
- 1/2 t baking powder
- 1/2 ground nutmeg
- 1/2 salt
- 1 c old fashioned oats
- 1/2 c raisins
- 3 T extra virgin olive oil
- 1 large egg
- 1/3 milk
- 4 medium carrots
- 1 medium ripe banana

1. Preheat oven to 400. Spray 12 muffin tin.

2. In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt.

3. Stir in oats and raisins

4. Add oil, egg, milk, carrots and banana. Stir until blended.

5. Fill each muffin tin with 1/4 cup of batter.

6. Bake 23-25 minutes.
