Pasta E Fagioli
This is a copycat version of the soup from the Olive Garden.
ingredients
- 3 teaspoons oil
- 2 lbs ground beef
- 14 oz slivered carrots
- 12 oz chopped onions
- 15 oz diced celery
- 48 oz canned diced tomatoes
- 2 cups red or white kidney beans
- 88 oz beef stock
- 3 teaspoons oregano
- 2 1/2 teaspoons pepper
- 5 tablespoons fresh chopped parsley
- 1 1/2 teaspoons Tabasco sauce
- 48 oz spaghetti sauce
- 8 oz dry pasta

Saute beef in oil in large 10 quart pot.

Add onions, carrots, celery and tomatoes and simmer for about 10 minutes.

Drain and rise beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles.

Simmer until celery and carrots are tender - about 45 minutes.

NOTE: This makes 9 quarts - cut in half for smaller batch.
