Sweet Orange Shrimp
Sweet with a bit of a bite from the horseradish...
ingredients
- 1 lb large shrimp (thawed)
- 1-2 medium oranges (for juice & zest)
- 1/4 C light mayonnaise
- 2 tbsp prepared horseradish
- 1 tbsp honey
- 1 tsp seasoned salt
- 1 tbsp canola oil
- 1 tbsp flour
directions

1) Peel & devein shrimp

2) Cut oranges in half; squeeze juice (1/2 C) into medium bowl. Whisk in mayonnaise, horseradish, honey and seasoned salt until blended; set aside.

3) Preheat large saute pan on med-high 2-3 minutes. Place oil in pan; swirl to coat. Add shrimp; sprinkle with four. Cook 2-3 minutes, stirring often, or until shrimp just begins to turn pink.

4) Stir in orange juice mixture; reduce heat to medium. Simmer 3-4 minutes, stirring often, or until shrimp are opaque and sauce thickens. Serve.
