Pumpkin Banana Bread
ingredients
- 3/4 c Splenda
- 3/4 c sugar
- 3/4 c Smart Balance 50/50 butter blend
- 3 large eggs
- 1 c canned pumpkin
- 1 c mashed ripe bananas,(2 med bananas)
- 2 2/3 c all-purpose flour
- 2 tsp baking soda
- 3/4 tsp sea salt
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 c chopped walnuts or pecans (optional)

Heat oven to 350 degrees.

Combine Splenda, sugar, Smart Balance, and eggs in large mixer bowl. Beat at medium speed, scraping bowl often, until mixture is light and fluffy (1-2 minutes). Add remaining ingredients, except nuts and beat on low until just moistened (1-2 minutes). Stir nuts in by hand.

Pour into 2 greased 9x5 inch loaf pans. Bake for 45 to 55 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes and remove from pan on cooling rack.
