Daddy's Favorite Cherry-Topped Cheesecake

- CRUST:
- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 1/4 cup butter, melted
- CHEESECAKE:
- 24 ounces cream cheese, softened
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 16 ounces cherry pie filling, chilled

Preheat oven to 350° F.

Combine crumbs, sugar, and butter. Press into the bottom and up the sides of a 9-inch springform pan. Bake at 350°F for 10 minutes. Set aside.

CHEESECAKE:

Turn oven up to 450°F.

Combine cream cheese, sugar, and vanilla, mixing at medium speed with an electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Pour into crust and bake at 450°F for 10 minutes. Reduce oven temperature to 250°F and continue baking for 30 to 40 minutes.

Remove ring from cake pan and place in refrigerator to chill.

Spread cherry pie filling over cheesecake before serving.
