Dad was antelope hunting in Wyoming on a friend’s parents ranch. The picture above is him on the ranch with the antelope he shot. He got this recipe from his friend’s parents so it’s very authentic.

ingredients

  • 2 lbs pinto beans
  • 1/2 lb.salt pork in chunks (1/2 lb. of fresh side meant, or any pork may be used)
  • 1/2 c. chopped onion
  • 1/2 lb. bacon cut
  • 6 pieces garlic cut fine
  • 2 tsp oregano
  • 4 chili pods
  • 2 tbsp salt

directions

Wast do not soak! 2 lbs pinto beans. Fill pot half full of water and bring to boil. Cut flame to simmer and add beans. Keep beans just covered with water. If you add water, have it boiling, or beans will toughen. At the end of an hour, add several chunks of salt pork, 1/2 c. chopped onion, 1/2 lb. bacon cut. At the end of 2 hrs, add 6 pods of garlic cut fine. At end of 3 hrs, add 2 teaspoons oregano and four chili pods, crushed between fingers. At the end of 4th hour, add 2 tablespoons salt, and simmer for another hour or longer. Serve hot oever slices of bread and butter. These get better with age. Store in the refriderator and take out and re-heat as needed.
