Bruschetta
I liked this best when I could use fresh tomatoes from my garden but we still enjoy it in Colorado. Often we’ll have bruschetta as a side dish with dinner.
ingredients
- Loaf of crusty bread
- olive oil
- tomatoes, chopped
- cheese of choice
directions
Slice the bread and brush with olive oil. Cover with tomatoes and sprinkle with grated cheese. Toast in a 400 degree oven until cheese is melted. Serve immediately.
