Shrimp Cocktail Salsa
I created this on one of our trips to Santa Cruz and it’s been a hit ever since.
ingredients
- 2 lbs lg shrimp, shrimp
- 3 Avocados
- 6 green onions
- 1 bunch cilantro
- 1 bunch of celery
- 8 or so tomatoes
- 1 English cucumber
- Juice of 4 limes
- Salt & Pepper
directions
Peel and remove tails off shrimp. Cut into thirds. Chop avocados, onion, cilantro, celery, tomato, and cucumbers. Add all to a large bowl. Squeeze limes and add juice to mix, salt & pepper to taste. Serve in a small cup or with tortilla chips.
notes
To kick it up, add chilis or jalapeno. Side note: the avocado will break down with the lime and stirring and make a creamy sauce.
