Green Apple Salad
Fast, fresh and simple
ingredients
- 1/4 cup pine nuts
- 1/2 head radicchio
- 1 head boston lettuce
- 1 bunch arugula
- juice of 1/2 lemon
- 1/4 cup olive oil
- slivers of fresh parmesan
- 1/2 green apple, diced

Toast nuts until lightly browned. Wash greens and pat dry, tear into small pieces and combine.

Whisk lemon juice, oil, salt and pepper to taste. Pour over greens and toss gently to coat. Garnish with cheese, apple and pine nuts.
