Spicy Eggplant

A great side dish to accompany meat, noodles, or on its own with white rice. Patrick’s favourite vegetable dish on Earth.
ingredients
- 6-8 long japanese eggplant
- 4 tbsp sesame oil
- 4 cloves minced garlic
- 4 tbsp soy sauce
- chili in oil (or dried chili flakes) to taste

Quarter eggplants lengthwise to achieve long strips. Halve crosswise if desired.

Heat sesame oil in a frying pan or wok, then add eggplant skin side down. Add garlic, soy sauce, and chili, then cover and simmer for 5-8 minutes until very tender.
notes
I've been known to add a few tablespoons of plum sauce to the recipe -- the result is a sweeter dish with a thicker sauce.
