Baked Meatballs

Nothing beats homemade meatballs - these are quick enough to make on a weeknight! You can vary the ingredients to make them more figure friendly!

ingredients

  • Olive Oil or Non-Stick Cooking Spray
  • 1 lb Ground Turkey, Beef or Meatloaf Mix
  • 1 egg (or 2 egg whites)
  • 1/4 cup Italian Breadcrumbs
  • 1/4 cup Parmesan Cheese
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Italian Seasoning (optional)

    Preheat oven to 350 degrees

  • 2

    Lightly coat cookie sheet with olive oil or non-stick cooking spray

  • 3

    In a large bowl break up the meat with a fork

  • 4

    Crack egg (or egg whites)in a separate bowl and whisk with a fork, pour over meat.

    Add the rest of the ingredients and mix with your hands to combine. Try to be gentle and not overwork the meat.

    Shape into meatballs and place on prepared cookie sheet.

  • 7

    Bake in preheated oven for 25 to 30 minutes.

I like to....

Warm up some marinara sauce about 15 minutes after I put the meatballs in the oven. Once the meatballs have baked for 25 to 30 minutes I put then in the marinara sauce to simmer while my pasta is cooking. Serve with your favorite pasta and ricotta cheese.
