Caramel Corn
ingredients
- 8 cups popped corn
- 3/4 cup brown sugar
- 6 Tbsp. margarine
- 3 Tbsp corn syrup
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. vanilla
directions
Combine brown sugar, margarine, corn syrup and salt in a saucepan; cook and stir until mixture comes to a rolling boil. Cook without stirring for 5 minutes. Remove from heat. Stir in baking soda and vanilla. Pour hot mixture over popcorn in a large roaster or pan stirring well to coat. Put in 300° oven for 15 minutes. Stir again (add peanuts if desired), bake 5-10 minutes more.
