ingredients
CREPES- 1 cup flour
- 1 cup milk
- 1 egg, beaten
- 1/2 teaspoon salt
- 2 pounds ricotta
- 8 oz fat free cream cheese
- 2 eggs
- handful of chopped fresh parsley
- black pepper
- 1/4 cup grated mozzarella
- Use your favorite marinara sauce

I usually make a double batch of crepes, because I always end up with more filling than I do crepes. Crepes can also be used for cannelloni, blintzes, etc.
