Hot Chicken Salad
This recipe came from DonnaRae and it seems mom and Jon have an ongoing dispute about who likes it more.
ingredients
- 3 skinless chicken breast cut into cubes
- 2 C thinly sliced celery
- 1/2-3/4 C chopped cashews
- 1/2 Tsp salt
- 1/4-1/2 C chopped green onions
- 1 C mayonnaise
- 2 Tb lemon juice
- 1/2-1 C shredded cheddar cheese
- crushed potato chips
directions
Combine all ingredients in a mixing bowl except the crushed potato chips and mix well. Put mixture into a medium sized casserole dish. Can prepare ahead and chill in fridge. Just before baking, spread top with crushed potato chips. Bake at 450 degrees for 15-25 minutes.
