Stir-Fried Pork with Peanut Sauce
This is a great meal, and can be customized with whatever meat and vegetables are on hand. The sauce is delicious.
ingredients
- 1/3 Cup creamy peanut butter
- 1 Cup water
- 2 Tbsp rice vinegar or cider vinegar
- 4 Tsp reduced-sodium soy sauce
- 1 1/2 Tsp ground coriander
- 1 Tsp ground ginger
- 2 Tbsp vegetable oil

- 1 lb pork tenderloin, cut into 1/2-inch cubes
- 1 large red bell pepper, sliced
- 2 medium carrots, peeled and thinly sliced
- 1 medium yellow onion, sliced
- 2 scallions thinly sliced
- 1/2 Cup peanuts (optional)

Combine the peanut butter, 1/2 cup of the water, the vinegar, soy sauce, coriander, and ginger in a small bowl and set aside.

Cook rice. meanwhile, heat oil in a 12-inch skillet over medium-high heat for 1 minute. Add the pork and stir-fry for 5 minutes or until brown and cooked through. Remove with a slotted spoon and set aside.

Add the pepper, carrots, onion, and remaining water to the skillet and cook, uncovered, for 5 minutes.

Stir the peanut butter mixture into the skillet, add the pork, and cook, uncovered, for 1 minute. Stir in the scallions and serve over rice.
notes
Can make this with chicken as well as pork. But pork is better.
