Sweet and Sour Chicken

ingredients

  • 1 whole chicken, cooked and boned, reserving and dividing broth.
  • 1 can chunk pineapple
  • 1 cup sugar
  • 2 T. cornstarch
  • 3/4 c. cider vinegar
  • 1 t. soy sauce
  • 1/2 t. ginger
  • 1 chicken bouillon cube
  • 1 can water chestnuts, drained
  • 2 cups dry rice, use remaining broth to cook rice

directions

Sauce: drain pineapple into two cup measuring cup. Add broth to pineapple juice to make 1 1/2 cups. In saucepan combine sugar cornstarch, pineapple syrup broth, vinegar, soy sauce, ginger and bouillon. (Everything has to be cold) Bring to boil, sirring constantly, for 2 minutes till thick. Stir in chicken, pineapple and water chestnuts; combine with cooked rice and stir well.
