Curried Couscous and Mahi Mahi
This low calorie, high fiber dish will knock your tastebuds and socks off!
ingredients
- 4 6 oz. mahi mahi filets
- 2 cleaned and sliced zucchini
- 1 box Far East Whole Wheat Couscous
- 2 T. Red Curry powder
- 1 T. Garlic Salt
- 1 Tsp. black pepper
- 2 T. EVOO

1. Prepare couscous according to box. When boiling water, add curry powder, garlic salt, and papper.

2. In a non-stick skillet, saute fish on medium high heat. While sauteing, sprinkle each filet with a dash of curry powder and salt. Cook for at least 5 minutes one each.

3. Remove fish from the skillet and drizzle with 1 tablespoon of EVOO. Place zucchini in the pan and saute until softer and lightly browned.

4. Fluff couscous and add zucchini. Drizzle with 1/2 tablespoon more of EVOO.

5. Place one cup of couscous mizxture on a place and top it with the mahi mahi. ENJOY!
