BBQ Fish Packets
This sounds like the most bizarre recipe - but turns out perfectly every time.
ingredients
- 2 fish fillets
- 1 onion thinly sliced
- 2 carrots thinly sliced
- 4 cheese slices
- 4 tbsp butter
- 4 tsp dried dill
- salt and pepper

Cut each fillet into 2, or appropriate size for each person.

Lay out piece of tinfoil at least 18" long. In center of foil place 1 tbsp butter, 1/4 of the onion, 1/4 of the carrots, 1 serving of fish, 1 cheese slice, 1 tsp dill, salt and pepper to taste.

Grasp the two ends of the foil and fold in towards the center. Roll the ends together making a tight seal. Roll each open end to might a tight seal.

Place on the bbq, seal side up, for 5-10 minutes on medium low. Foil packet will puff up with steam. Flip for 2-5 minutes to be sure both side of fish are well cooked.

Removed from bbq and let cool for a minute. Open VERY CAREFULLY as the steam will pour out.
