GRANNY'S FRENCH MARKET SOUP

- 1 pint dry soup mix (can use
- the 15 dry bean pkg)
- Ham hock or ham scraps
- Bay leaves
- 1 qt. tomatoes (2 can’s)
- 2 medium onions (chopped)
- 2 cloves garlic (chopped)
- 6 stalk’s celery (chopped)
- 1 bell pepper (chopped)
- 1/2 lb smoked sausage (cut up)
- 1/2 large fryer (raw / cut up)
- Salt/Pepper to taste
- 2 T chopped parsley

Wash and drain beans. Add water to cover, with 1 T salt added to this water. Soak over-night / drain. Add 3 qts. water and ham hock or ham scraps and bay leaves. Cover and simmmer 2 hour’s. Add the quart of tomatoes, chopped onion, garlic, celery and bell pepper. Salt and pepper to taste. Simmer uncovered 1 1/2 hour’s. Add sausage and chicken. Simmer until chicken is done. Remove the chicken, debone and cut up into small pieces and return to soup. About 10 minutes before serving, add 2 T chopped parsley.
