Smokey shrimp and avocado ceviche
ingredients
- 1 1/2lb medium shrimp peeled and deveined
- 1 cup diced peeled avocado
- 1/3 cup finely diced red bell pepper
- 1/3 cup finely chopped, peeled jimica
- 1/3 cup fresh lime juice
- 1/4 cup finely chopped onions
- 1/4 cup fresh orange juice
- 3 tblsns chopped fresh cilantro
- 1 Tblspn finely chopped canned chipotle chilies in adobe sauce
- 1/2 tspn sugar
- 1/2 tspn salt
- 4 oz baked tortilla chips

Cook shrimp in boiling water for 2 minutes, drain and plunge in ice water, let stand 3 minutes, drain

Combine shrimp and remaining ingredients except chips in a large bowl, stirring well..Cover and Chill up to 4 hours. Serve with Chips.

Can be made earlier in the day, but don’t marinate for more than 4 hours.
