Meal in One Casserole
ingredients
- 1 (14.5 oz) Whole Wheat noodles (egg)
- 2 small cans of Campbell’s Low-Sodium Tomato Soup
- 1 medium yellow onion, diced
- 1 (10 oz) package of mushrooms, chopped
- 1 bag of shredded reduced-fat Cheddar or Colby Jack cheese
- 2 Tbsp Olive oil

Preheat the oven at 375°.

Cook the pasta as directed. Drain and set aside.

Pour 1/2 Tbsp olive oil in a pan over medium-high heat.

Cook the onion for about 7 minutes, or just when it gets translucent.

Remove the onion and place aside.

Add 1/2 Tbsp olive oil and cook the mushrooms until done, about 8-10 minutes.

Put the pasta, mushrooms and onions in an oven safe casserole dish.

Pour the soup over it and mix it all together.

Sprinkle the cheese on top.

Bake (covered with aluminum foil) for 15 minutes.

Uncover, stir, add more cheese and bake for another 15 minutes, so it is cooked through.

Serve warm.
