Tomato Thokku
This is a spicy and tangy dish goes extremely good with chappati,dosa,upma,curd rice
ingredients
- 1.Red Tomato-20
- 2.Chilli powder-1 cup
- 3.Garlic-30 cloves
- 4.Tumeric powder-1 tblspn
- 5.Coriander powder-5 tblspn
- 6.Cumin powder-2 tblspn
- 7.Lime juice-1/2 cup
- 8.Oil-1 cup
- 9.Jaggery-1 cup
- 10.Cumin seeds- 1tblspn
- 11.Salt to taste
- 12.Red chilli- 2 cut in to small piece.
- 13.Hing-1/2 tsp
- 14.mustard seeds- 2 tsp
- 15.Curry leaves- 1 spring

1.Boil the Tomato and peel it off and grind it in to a nice paste.

2.Take a microproof bowl add 1 tblspn of oil and put the grinded tomato and cook for 30 min until it is thicken.

3.Take a large kadai half of the oil and put the tomato puree and cook a little.

4.Add all the spices and salt to taste and stir for 2 min.

5.Add jaggery and stir till it is dissolved.

6.when the tomato paste is reduced in a thokku form take it from the heat and add lime juice.

7.Transfer it in to a bowl.

8.Now heat the rest of the oil and add cumin seeds,Mustard seeds,Red chilli,hing,Curry leaves.

9.Add the tempering to the paste and stir well.

10 Let it cool down.

11.Store in a Air tight container in the fridge.
notes
1.Reduce all the water in the grinded tomato before adding in to the oil. 2.Add the spices according to ur taste. 3.Add the tempering wen it is slightly cooled. 4.You can store this in refrigerator up to 1 month. 5. U can also add some tamarind juice.
