ingredients

  • 8 c. spinach, washed & stems removed
  • 4 1/4 oz can chopped black olives
  • 4 oz crumbled feta cheese
  • 8 3/4 oz can garbanzo beans, rinsed
  • 8 3/4 ox can red kidney beans, rinsed
  • 3 tbsp walnuts or almonds, coarsely chopped
  • 1/4 c. dried fruit (raisins, apricots, figs)
  • 1/2 c. green onions, thinly sliced
  • Salad Dressing:
  • 1/3 c. Dijon mustard
  • 1/4 c. olive oil
  • 1/3 c. rice or balsamic vinegar
  • Add desired herbs (chives, thyme, oregano)

    1. Tear spinach leaves into bite-size pieces and place in a large bowl.

    2. Add remaining ingredients and toss together.

    3. Pour 1/d c. of dressing on salad and toss gently.
