Shrimp Creole

ingredients
- 1 TBSP parsley
- 1/2 c chopped onion
- 1/2 c chopped green pepper
- 1 c diced celery
- 1/4 c butter
- 2 1/2 tsp salt
- 1 1/2 tsp chili pepper
- 4 c tomatoes
- 2 doz shrimp
directions

Saute parsley, onion, green pepper and celery in butter.

Blend in flour and seasonings.

Add tomatoes, stirring constantly until mixture thickens.

Reduce heat and simmer uncovered for 30 minutes.

Stir in shrimp and bring to a boil.

Reduce heat and simmer 20 minutes.
