Shelly's Chinese Noodle Salad

ingredients

  • 2 packages of Chicken Flavored Top Ramen noodles
  • 1 cup of slivered almonds
  • 1 TB butter
  • 1 medium head of cabbage (finely shredded)
  • 1 red bell pepper (thinly sliced)
  • 2 TB sesame seeds
  • 1 bunch green onions (chopped)
  • 3/4 cup vegetable oil
  • 4 Tsp of sugar
  • 1/2 cup cider vinegar (or rice vinegar)
  • Spice packs from Ramen Noodles
  • Pinch of salt
  • Pepper to taste

    Boil noodles according to package directions, do not add spice packs. Drain and rinse with cold water, drain again. Toast almonds in butter. Combine noodles, almonds, cabbage, red pepper, sesame seeds, and green onions.

    Prepare dressing by combining the oil, sugar, vinegar, spice packs from Ramen Noodles, salt and pepper. Pour dressing over salad. Allow to chill several hours before serving.
