Coconut Pilaf
ingredients
- 2 Tbs. olive oil
- 1 cup onion - chopped
- 1 1/2 cups jasmine rice
- 3/4 cup Viognier or other dry white wine
- 1 cup chicken broth
- 1/2 cup coconut milk
- 1/2 tsp salt
- 2 Tbs. orange peel- shredded
directions
Pour olive oil into a medium pot over medium-high heat. Add onion and cook stirring often until soft. Add rice and cook, stirring 2 minutes. Add wine and cook, stirring until absorbed. Add chicken broth, coconut milk, and salt. Stir to combine,cover and reduce heat to low. Simmer 20-25 minutes till rice is tender. Stir in finely shredded orange peel

I tried this recipe on 9/9/09 - made it to go with some pan seared scallops that Josh had been craving! YUMMMMY!
