Baby Potatoes with Rosemary

ingredients

  • 4 lbs assorted small potatoes
  • 2 Tbsp olive oil
  • 2 Tbsp melted butter
  • 2 Tbsp chopped fresh rosemary (1 Tbsp dried rosemary)
  • 3/4 tsp salt
  • 1/2 tsp coarsely ground black pepper

    Preheat oven to 425

    Place cut up potatoes in large roasting pan

  • 3

    Toss with olive oil, butter, rosemary, salt, pepper

  • 4

    Roast for 40 minutes turning occasionally until golden brown
