Veggie Soup
ingredients
- 1 box vegetable broth
- 3 carrots
- 1 onion
- 3 stalks celery
- 1/2 lb. fresh green beans
- 1/2 lb. fresh asparagus
- 1 turnip (you can use potatoes if you like)
- 1 can diced tomatoes
- 1 cup peas (or pigeon peas!)
- 1 can V8 juice
- herbs and spices
directions
Sauté carrots, celery, turnip, and onion. Add broth, green beans, asparagus, and tomatoes and peas. Add V8 and any herbs and spices. Simmer on low for 30-45 minutes.
