Layer Salad

ingredients

  • Salad:
  • 1 head green lettuce, chopped
  • 1/2 cup chopped onions
  • 1/2 cup celery
  • 1 can diced water chestnuts
  • 1 box of frozen peas
  • Dressing:
  • 2 cups mayonnaise.
  • 2 TB sugar
  • 1/2 cup grated Parmesan cheese
  • Topping:
  • 1 pound chopped, crisp bacon
  • 1/2 dozen chopped hardboiled eggs

    Layer the salad ingredients twice in the order they are given. Then spread the dressing over the top of the salad like you are frosting a cake. Make sure to cover the entire salad to seal the lettuce.

    When ready to serve top with the bacon and chopped eggs. Toss if all of the salad that is to be eaten at one time. Otherwise, dip out only what is to be eaten and toss that. The rest will stay fresh for 3 days if untossed.

This is Matthew's very favorite salad. It always seems to be at our Easter dinners with Honey Baked Ham!
