Pasta Salad
This makes a good luncheon dish
ingredients
- 12 ounces Bow Tie pasta
- 1 cup mayonnaise
- 1/4 cup olive oil
- 1/4 cup plus 2 Tablespoons red wine vinegar
- 2 Tablespoons lemon juice
- 1 Tablespoon Dijon mustard
- 2 cloves garlic, crushed
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon basil
- 2 Tablespoons chopped green onion
- 8 ounces Mozzarella cheese, cubed
- 1/4 pound or less, thinly sliced pepperoni
- 1 pint cherry tomatoes, cut in half
- 1 green pepper, thinly sliced
- 1 red pepper, thinly sliced
- 1/4 cup sliced black olives (or green)
- 1 cup raw broccoli flowerets
- 1 pint fresh mushrooms, cut into bite-sized pieces
- Grated Parmesan cheese

Cook pasta, drain, and cool in large bowl.

Mix mayonnaise, oil, vinegar, lemon juice, mustard, garlic, salt, and pepper, and basil to make dressing.

Toss with remaining ingredients, except Parmesan cheese. Sprinkle with Parmesan cheese before serving.
