Wendy's Roasted Tomato Pasta
Perfect for summer.
ingredients
- 4 pounds of very ripe tomatoes, cut into chunks
- 2/3 cup olive oil
- 3-6 cloves garlic, chopped
- 2 Tbsp. dried basil or 8 Tbsp. fresh
- 4 tsp. sugar
- splash Tabasco
- salt and pepper to taste
- 1/2 cup grated Parmesan
- 1/2 lb rotini or penne pasta

Preheat oven to 450°F

Combine all ingredients except pasta in a large bowl. Spread tomato mixture out over a cookie sheet in a single layer.

Bake for 30 minutes or until some of the edges of the tomatoes are starting to blacken.

Toss with the cooked pasta.
