Chicken Adobo
ingredients
- 2 tbsp vegetable oil
- 8 chicken thighs, skinless
- 3 onions, chopped
- 2 cloves garlic, minced
- 1/4 soy sauce
- 1/4 cup vinegar
- 1 tbsp liquid honey
- 1/4 tsp pepper
- 5 small new potatoes (1 lb), cubed

In a large saucepan, heat oil over medium high heat.

Brown chicken in batches and transfer to plate.

Add onions and garlic and cook for 10 minutes, stirring often, until softened and golden.

Add 1/4 cup water, soy sauce, vinegar, honey and pepper and bring to a boil.

Add the chicken and potatoes.

Cover and cook over medium low heat, turning chicken once for 40 minutes until juices run clear.
