Beer Beef Stew
ingredients
- 1-lean beef roast
- 1 1/2 cans of Gennis beer
- 1- Can tomato garlic paste
- 1- Small onion
- 1- Red pepper
- 3- Large stew carrots
- 5-6 small new potatoes
- Salt and Pepper
- Paprika
- Fresh Thyme

Cut and trim roast into cubes.

Brown in large stew pot with a bit of Olive oil. Be sure to remove liquid when necessary to ensure the cubes have a nice browning. Chop onion fine and cook with the browned beef until soft. Add can of tomato paste and stir well. Cook for about 1 min. Season with sea salt and pepper. Add 1 1/2 cans of dark Gennis beer and stir well. Bring to a slight boil and reduce heat to med low. Add red pepper, potatoes and sliced carrot. Mix. Cook on low to med heat for about 3-4 hours. Meat will be very tender. Season with a bit of Paprika, Thyme and serve.
