ingredients
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp hot water
- 1 tbsp garlic
- 3 tbsp brown sugar
- 1/4 tsp crushed red pepper
- green onions, chopped
- sesame oil

Bake eggplant 30 minutes at 475°. Peal. Cube.

Combine garlic through hot water.

Use peanut oil in wok. Stir-fry eggplant. Pour sauce until it thickens a little. Pour over rice.

Drizzle with sesame oil.
