Chicken Piccata

With a light, delicate flavor this dish is wonderful in the summer time with a cold glass of wine.
ingredients
- 2 lb. Chicken breast
- salt and pepper
- 1/3 cup flour
- 1/3 cup olive oil
- 2 Tb. butter
- 1 cup water
- 1/2 cup white wine
- 1 chicken bouillion cube
- 2 medium lemons
- capers
directions
Combine the flour, salt and pepper and coat the chicken breasts. In a large saute pan, heat up the olive oil and butter, and cook the chicken until browned. Stir in the water, wine, capers and bouillion cube and reduce the heat. Simmer until chicken is cooked through. Cut one lemon in half and juice, and slice the other one. Remove the chicken breasts from the pan and pour in the lemon juice. Bring to a boil, return the chicken breasts and spoon the sauce over the chicken. Serve with the slices of lemon.

I was first taught this recipe by one of my mother's friends. While I still cannot make it as good as she does, the results are still wonderful.
