Mediterranean Pasta

Pasta with grilled chicken, kalamata olives, capers, cherry tomatoes and feta.
ingredients
- 10 ounce package of grape tomatoes, sliced in half
- 1 1/2 cups of kalamata olives (pitted) sliced in half
- 1 cup of asparagus cut into pieces
- 1 3.5 ounces of capers
- 4 cloves of garlic (rough chopped)
- 1 shallot (diced)
- 1 pound of penne pasta (or other type)
- 3-4 grilled chicken breasts (1.5 pounds)
- Salt
- Pepper
- Olive Oil
- Italian Seasoning
- Reserved Pasta water
- 4 ounces feta cheese
- 1/2 bottle white wine (pinot grigio or other)
- 1-2 lemons

Prepare all ingredients. Boil pasta according to package. Slice grape tomatoes and kalamata olives, set aside. Drain capers, set aside. Season chicken with salt, pepper and Italian Seasoning. Heat pan and sear chicken approximately 4 minutes on each side until done and browned. Let chicken cool and dice into bite sized pieces.

Assemble meal: After chicken is removed, let pan cool and then sweat garlic and shallots. De-glaze the pan with white wine and lemon.

After pasta is done, set aside 1 cup of the cooking liquid. In a pan sweat garlic and shallots, then cut up and sear asparagus in a separate pan. After asparagus is cooked, add back olives, tomatoes, and capers until tomatoes soften, olives give up some of their juice and wine reduces.

After sauce has come together pour sauce over the drained pasta, then add the diced chicken.

Top with feta and enjoy!
