Delicious Creamy Chicken Enchiladas
Everyone loves these!!! Very rich, and very delicious.
ingredients
- 1 whole fryer cut up (A grocery cooked Rotisserie chicken works great!)
- 1 onion chopped
- 1 4.5 ounce can chopped green chiles drained
- 1 8 ounce package cream cheese softened
- 8-12 flour tortillas (hand made are a must)
- 16 ounces shredded Monterey Jack cheese
- 1 cup whipping cream (S.Living calls for 2 cups but I think this makes them too rich. You can use half and half too.)
- Sauce:
- 1 can green enchilada sauce
- 1 can red enchilada sauce
- Paprika

Saute onion and green chiles in butter, add cream cheese and chicken and stir until mixture is smooth.

Spoon 2-3 tablespoons chicken mixture down the center of a tortilla and roll up.

Pour a little of the green and red sauce into bottom of pan(1/2 cup total). Place tortillas, seam side down, into pan. Top tortillas with mjack cheese, then pour cream over the top. Finally, drizzle red and green sauce over entire pan and sprinkle with paprika.

Bake at 350 for 30 minutes or until bubbly.

NOTE: You may roll tortillas,place them in the pan, top with cheese and freeze them or refridgerate them overnight. Wait until right before you bake to pour on the cream and drizzle the sauces.
