The Best Chicken Tortilla Soup

Spicy and savory, this soup is a great filler all times of year. The toppings definitely make the meal.
ingredients
- 1 can chicken broth
- 1 can tomato sauce
- 1 can diced tomatoes
- 3 cups shredded chicken
- 2 anaheim chilies, diced
- 1 jalapeno pepper, diced
- 1 tsp. salt
- 2 tsp Tabasco sauce
- 1/2 cup diced onion
- 3-4 large tomatoes, diced
- 2 Tb. minced cilantro
- 1 Tb. chili powder
- 2 tsp. cumin
- 2 tsp. pepper
- 1/2 tsp. chipotle pepper
- Garnish:
- 1 cup shredded cheddar cheese
- 1 avocado, chopped
- 1/4 cup cilantro
- 1 lime, cut into wedges
- 2 cups crushed tortilla chips
directions
Saute the onions in a large soup pot. Add the remaining ingredients except for the garnish and simmer for at least one hour. Can also be cooked in the crockpot. Top with garnishes when serving.

This recipe was from my mother-in-law, and even though it was very spicy I kept eating until I was nearly crying. Definitely worth it.
