Clam Chowder
ingredients
- 1 medium chopped onion
- 4 medium cubed potatoes
- 2 carrots
- 2 c. milk or half & half
- 2 T. flour
- 2 cans minced clams (undrained)
- 2 c. hot water
- 2 T. butter
- 2 tsp. salt
- 2 T. parsley
- 1/4 tsp. thyme
- 1/4 tsp. pepper

Melt butter and saute chopped onion.

Add hot water and cubed potatoes. Bring to boil. Reduce heat to simmer. Add seasonings (salt, parsley, thyme, pepper). Simmer 10 minutes.

Add carrots to broth. Add clams. Cook till potatoes and carrots are done.

Mix together flour and milk/cream. Add to chowder to thicken.
