Anzac Biscuits
This is a traditional recipe form Australia and New Zealand. It is a coconut butter cookie. It is called Anzac as it is associated with the joint holiday; ANZAC DAY to commemorate the Gallipoli landings during WWI.
ingredients
- 1 cup of quick cooking oats
- 3/4 cup of coconut
- 1 cup all purpose flour
- 1 tsp baking soda
- 1 cup of white sugar
- 1/2 cup of butter
- 1 TB golden syrup
- 2 TB boiling water
directions

Mix oats, flour, sugar, and coconut together.

In a small saucepan over low heat, melt the syrup and butter together. Mix the soda and the boiling water and add to the melted butter and syrup.

Add butter mixture to the dry ingredients. Drop by teaspoons on greased cookie sheets (or baking paper)

Bake at 350 degrees for 18-20 minutes.

This recipe was given to me by Joelle Little. She made them for a school project that we call the Biome Buffet. Her city of choice was Sydney. Funny thing is that Bobby and I have seen the Little family on several vacation trips that we have taken.
