Mexican ("Migas") Omelette
This is our favorite weekend breakfast - a southwestern omelette with crunchy tortilla chips, salsa, and cheese
ingredients
- 2 eggs
- Splash of milk
- Salt and pepper
- 3 tbs chunky salsa
- 4 tbs grated cheese (we like the store-bought cheddar-jack blends, but will grate up whatever’s in the fridge in a pinch)
- Handful of tortilla chips, broken up (or more, based on preference)

Spray a small frying pan with PAM and turn heat on low to prepare pan

Beat eggs, milk, salt and pepper and pour into pan

Add chips, cheese, and salsa to the omelette and fold gently to cover the center. Cook for another minute on each side, flipping once if you like

Serve immediately

Mexican Migas is literally a scramble of eggs, stale tortilla chips, salsa, and some cheese. This omelette is our take on Migas.
