Ingredients

  • 1/2 pound Margarine or Butter
  • 1 Cup Flour
  • 8 Cups Water
  • Salt & Pepper to taste
  • 4 Beef Bouillon Cubes
  • 1 Cup Diced Carrots
  • 1 cup Diced Onion
  • 1 Cup Diced Celery
  • 1 10-ounce Package frozen Mixed Vegetables
  • 1 16-ounce Can tomatoes
  • 1 Pound Ground Round Steak
  • 2 Tablespoons margarine

In Large sauce pot, make roux: Melt Margarine, stir in flour, and gradually add 2 cups of water. Stir until smooth. Add all other ingredients EXCEPT ground round steak and 2 tablespoons margarine. Set aside. In another pan, saute ground round steak in margarine until browned. Drain off grease. Add meat to first mixture and simmer, stirring occasionally, for 1 hour and 30 minutes or until vegetables are tender. If thicker consistency is desired, cut back on water by 2 cups. Makes an excellent stew.
