Harvest Burgers (Also known as Super Duper Burgers)

This is a favorite that we serve in the field at harvest time, thus the name, Harvest Burgers.

ingredients

  • 1 1/2 lbs. ground beef
  • 1/2 onion, diced (optional)
  • salt & pepper
  • 2 cans (8 oz) tomato sauce
  • 2 hard boiled eggs, chopped
  • Velveeta cheese
  • 8 hamburger buns

directions

Hollow out the top of the buns and set crumbs and buns aside. In a large skillet brown the meat and onions with salt & pepper, drain. Add tomato sauce, chopped eggs and bread crumbs from the buns. Stir together and simmer 15 minutes. Fill buns with meat mixture and top with a slice of cheese and top of bun. Wrap each one in waxed paper and place in a roaster pan. Cover and bake at 250 degrees for 30 minutes. These store great in the refrigerator. If refrigerated, bake for 1 hour at 250 degrees. These stay hot a long time.
