Pasta - Roasted Bell Pepper & Sausage

ingredients
- 1 lb fusilli pasta
- 2-3 links chicken sausage
- 3 red and/or yellow roasted bell peppers (from jar)
- 1 onion, diced
- 1 cup asiago cheese, shredded
- 2 tablespoons fresh chives, diced
- 1 tablespoon fresh parsley, diced
- salt and pepper

Bring a pot of salted water to a boil, and cook the fusilli pasta.

While the pasta is cooking, dice the onion and sausage, and cook over medium heat in a frying pan.

Dice the roasted bell peppers, chives, and parsley, and grate the asiago cheese. Save the liquid from the bell pepper jar.

When the pasta is cooked, drain and mix with the onion, sausage, bell peppers, chives, parsley, and cheese in a large mixing bowl. If the mix is a too dry, add a little of the liquid from the roasted bell pepper jar. Season with salt and pepper and serve.
