Corn Muffins
ingredients
- 1/2 cup milk
- 1 1/2 tsp vinegar
- 1 cup cornmeal
- 1 cup all purpose flour (1/2 whole wheat and 1/2 white all purpose)
- 1/2 tsp baking soda
- 1/2 tsp cumin
- 1/2 tsp each salt and pepper
- 1 can (14 oz/398 mL) creamed corn
- 1/4 cup vegetable oil
- 2 eggs
- 1/4 tsp hot pepper sauce
- 1 cup shredded cheddar cheese (or light cheddar)
- 1/2 cup frozen corn
- 3 green onions, thinly sliced
- 1/4 cup finely chopped coriander or parsley

Sit milk with vinegar and let stand for 5 minutes.

In large bowl, mix cornmeal, flour, baking soda, cumin, salt and pepper.

In another bowl, whisk together creamed corn, milk mixture, oil, eggs and hot pepper sauce.

Pour wet mixture over cornmeal mixture.

Sprinkle with cheese, corn, green onions, and coriander.

Stir until just dry ingredients are just moistened.

Spoon into muffin tin that has been sprayed with cooking spray.

Bake in centre of oven for 20 minutes or until tester comes out clean.

Let cool on rack.
