Lasagna
ingredients
- 4 tbsp. oil
- 1 1/2 c. chopped onion
- 1 tbsp. chopped garlic
- 1 1/2 lb. ground beef
- 1 tsp. basil
- 1 tsp. oregano leaves
- 1 bay leaf
- 2 tbsp. sugar
- 1 tsp. salt
- 1 1/4 tsp. pepper
- 2 - 28 oz. cans tomatoes
- 1 - 15 oz. can tomato sauce
- 1 - 6 oz. can tomato paste
- 1 c. water
- 2 lbs. ricotta cheese or cottage cheese
- 1 egg
- 1/2 c. parsley
- 1 1/2 - 8 oz. packages mozzarella cheese
- 8 tbsp. Parmesan
- 1 lb. lasagna noodles

1. In skillet, heat oil and add onions and garlic. Cook over medium heat for 5 minutes, stirring occasionally.

2. Add meat and cook until brown.

3. Stir in oregano, basil, bay leaf, sugar, salt and pepper.

4. Add tomatoes, tomato sauce, tomato paste and water. Break up tomatoes with potato masher.

5. Heat to boiling, reduce and simmer uncovered for 45-60 minutes. Stir occasionally.

6. Ricotta filling: In large bowl, combine ricotta, egg, salt and pepper. Beat until smooth.

7. Stir in parsley, 1 package of cheese (diced,) and 1 tablespoon of grated Parmesan. Set aside.

8. Cook lasagna noodles in salt water until almost tender. Drain.

9. Preheat oven to 350° and lightly grease baking dishes.

10. Spoon a little sauce in bottom of pan; layer noodles, cheese mixture, and sauce in pans, ending with sauce.

11. Sprinkle with remaining cheese and top with 1/2 package of mozzarella cheese (sliced.)

12. Bake 45-50 minutes.

13. Remove from oven, and let cool for 5 minutes.
