Cherokee Casserole
Rick Geiger’s famous Cherokee Recipe
ingredients
- 1 # Ground lean beef
- 2 cups Tomatoes
- 1 can Cream of Mushroom Soup
- 1 cup Minute Rice uncooked
- 3/4 cup Onion Diced
- 1.5 tsp Salt
- 1/8 tsp Garlic Powder
- 1/8 tsp Thyme
- 1/8 tsp Oregano
- 6 -8 Olives Stuffed w/ Pimentos
- 2-3 slices American Cheese cut into 1" strips for topping
directions
Brown meat in olive oil. Add onion; cook over heat until onion is tender. Stir in seasonings, tomatoes, soup and rice. Add half of olive slices. Simmer 5 minutes, stiring occasionally. Spoon into baking dish. Top with cheese strips. Broil until cheese is melted and decorate at end with remaining olive slices out of oven.
