Cheeseburger Soup
Delicious thick soup
ingredients
- 1/2 - 1 lb ground beef, browned, set aside
- 3/4 C. chopped onion
- 3/4 C. chopped Carrots
- 3/4 C. chopped celery
- 1 t. basil
- 1 t. parsley flakes
- Butter
- 3 C. chicken broth
- 4 C. diced potatoes (about 4 large)
- 1/4 C. flour
- 2 T. Butter
- 8 oz. velvetta or shredded ched. cheese
- 1 1/2 C. milk (I use much less for thicker “stew”)
- Salt/Pepper to taste

In large cooking pot, saute onions, carrots and celery in some butter until tender. Add broth, potatoes and hamburger to pot. Bring to a boil, then reduce to simmer about 10 - 15 minutes, until potatoes are at desired tenderness.

While this is simmering, prepare paste of flour and 2 T. butter. Once timer goes off, add paste slowly. I usually put some of the heated broth in a cup and mix the paste in it to avoid clumps, then add to pot.

Stirring, bring temp back up to boil, turn off heat, add cheese and milk (if desired) and stir until well mixed.

Its quite easy to prepare the onion, carrots and celery in advance, and add in frozen to hambuger and potatoes.
