Chicken Pot Pie

ingredients

  • 2 carrots, chopped and boiled
  • 1 cup frozen peas
  • 1 large potato boiled and cubed
  • 3 chicken breasts boiled and cubed
  • 1 1/2 cups milk
  • 2 cups chicken broth
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 cup onions, chopped
  • 1/3 cup flour
  • 1/3 cup butter
  • Crust
  • 1 1/3 cup flour
  • 1/2 cup butter or vegetable shortening
  • 1/2 tsp. salt
  • 3-4 Tbsp. ice water (use less if you’re using butter)

    Sauté onions in butter, add flour when onions are tender, pour broth and milk in quickly and wisk until smooth. Boil for 1 minute. Add rest of ingredients and stir together. Pour into a 9x9 square pan, top with crust and bake at 375 degrees until bubbly and crust is golden.

    Mix together and roll out into a 9x9 square.
