Seafood Gumbo
ingredients
- 1/2 cup of whole wheat flour
- 1/2 cup EVOO
- 1 cup diced onion
- 3 to 4 cloves finely chopped garlic cloves
- 1 large can crushed tomatoes
- 1 small can tomato paste
- chicken stock to desired thickness
- 3-4 lbs. shrimp cleaned
- 3-4 cans crab meat
- salt, pepper, basil, thyme, oregano, bay leaves, worcestershire sauce, Tabasco to taste

In large pot heat oil and flour over low medium heat stirring frequently until medium brown, being careful not to burn it. If it starts smoking, it is too hot. Add onions and garlic and cook over low heat.

Serve in bowls over rice (brown or white)
